Today I’m sharing my quick Irish Pub Cheese recipe made with:

  • Irish cheddar
  • Cream cheese
  • Irish beer
  • And spices

It’s the easiest recipe ever. You simply place the cheddar in a food processor and grind into small pieces. Then add the rest of the ingredients and puree until smooth.

Can Irish Pub Cheese Be Served Hot?

Irish pub cheese is wonderful served at room temperature.

Yes, it can absolutely be heated. Word of warning though, as it cools it might get a little gunky, so my advice would be to serve it in a small crockpot.

  • Break the cheddar into chunks and place in the food processor. Pulse to break the cheddar up into small pieces.

  • Add the cream cheese, beer, garlic, ground mustard, and paprika. Puree until completely smooth. Scrape the sides of the bowl and puree again if needed. Serve with pita chips, bread, crackers, veggies, or apple slices.

Yes, chain restaurants can hurt the character of neighborhoods and the ability of smaller restaurants to gain a foothold. But sometimes you have a craving... and that craving can only be satiated at a chain restaurant.

Admit your deepest darkest secret and tell what dishes at chain restaurants you like (and please don't forever ban me from the boards ;)

Here are mine:

Chevys
--chips (not very greasy or salty) and salsa (slightly brown the way it should be)
--fresh tortillas of El Machino
--beans a la charra (pinto beans with pork)

Spaghetti Factory
--spaghetti and meatballs
--creamy pesto salad dressing

Fuddruckers
--hamburgers (you order it medium and it comes out really flavorful and not dried to a crisp) & fries

California Pizza Kitchen (and even cheaper - CPK ASAP)
--chicken sesame dumplings
--roasted garlic chicken pizza

Chili's
--honey lime salad dressing

Fuzio
--firecracker pork fusilli
--chicken sausage penne

Boston Market (a.k.a. BoMart)
--chicken is quite good and moist (believe it or not my friends and I went here for Thanksgiving last year - it was a very White Trash Thanksgiving(tm) and fun)

  • In the bowl of a food processor add the shredded cheddar, cream cheese, spreadable cheese (or substitute) and roughly chopped garlic clove. Process until combined.
  • Add all the other ingredients except for the beer, salt and chives. Process and while processing slowly add the beer while monitoring the consistency (do not add it all if the dip is becoming runny).
  • Transfer to a mixing bowl and taste. Adjust seasonings as needed and add salt as needed. Fold in the chives, cover and refrigerate.
  • Serve garnished with a pinch of paprika and chives and accompanied by crackers, bread sticks and/or veggie sticks.
